Blinchiki

These are great if you want to fill with meat…or whatever else you want.
Ingredients:
2 eggs
1/2 Tb sugar (you can use more if this will be dessert, rather than with meat)
1/3 tsp. salt
2 cups milk (preferably whole)
1 1/5 c. flour
2 Tb. oil
Directions:
1.  Mix eggs with sugar and salt.
2. Add in oil.
3. Add milk. Mix well.
4. Add in flour. It’s okay if it’s very thin.
5. Oil the pan (cooking spray is probably most convenient). Make blinchiki!
*For blinchiki with meat: Finely dice onion, satte it on a pan, then add ground meat. Cook well, though don’t over-dry. Add in chopped hard-boiled eggs. Mix well. This will be your filling.
